Berry Cobbler

Ingredients
  

For the Fruit
  • 6 oz Blackberries
  • 6 oz Blueberries
  • 6 oz Strawberries
  • 2/3 C Sugar
  • 1 TBSP Corn Starch
For the dough
  • 1 C Flour
  • 2 TSP baking powder
  • 1/2 TSP salt
  • 1 TSP Vanilla Extract
  • 1 C Milk (I used 2%)
  • 1/3 C Butter, melted and cooled slightly

Method
 

Fruit
  1. Place fruit in mixing bowl
  2. Whisk together the corn starch and the sugar
  3. Stir the sugar and cornstarch mixture into the berries.
  4. Let the mixture rest for at least five minutes while you prepare the dough. This will let the sugar draw out the juices of the berries, a process called maceration.
For the batter
  1. In a separate bowl, sift together the flour, baking powder, and salt
  2. Add in the milk and stir with a wooden spoon or wire whisk until mixed.
  3. Add the melted butter and vanilla and mix until combined
Put it together and bake
  1. Prepare an 8 inch square cake pan with non-stick spray.
  2. Pour the batter into the pan
  3. Top the batter with the berry mixture. Be sure to scrape all the juices and sugar onto the batter as well.
  4. Bake for 50 minutes or until golden brown (It took only 43 minutes in my oven)
  5. Serve with ice cream or whipped cream.
